Chocolate does not respond well to moisture. When exposed to high humidity or moisture, white haze or spots (commonly called "bloom") will form on the chocolate. This won't affect the flavor, but it may not look as appetizing. Store your chocolate in an air conditioned room that is approximately 65 degrees and 50% humidity.
Chocolate can be frozen for up to 6 months when wrapped in an air-tight freezer bag. Do not remove the chocolate from the bag until it has reached room temperature to keep condensation from forming.
Chocolate will absorb other flavors and odors, so do not store near cleaning solvents, perfumes, chemicals, air fresheners, or the like.
When stored correctly, most chocolate has a shelf life of at least six months or longer. However, when mixed with other food products such as nuts, the shelf life will be significantly reduced.
