
Unsweetened Chocolate, also known as bitter or baker's chocolate, is pure chocolate liquor. Consisting of only ground roasted chocolate beans and cocoa butter, unsweetened chocolate carries a strong, deep chocolate flavor.

Dark Chocolate, chocolate without milk added, is quickly gaining in popularity among chocolate lovers. The U.S. government named this chocolate “Sweet Chocolate” and requires it have a 15% concentration of chocolate liquor. However, Europeans argue in order for chocolate to be “dark” it must contain 35% to 43% cocoa solids. Some commercial dark chocolate does contain milk. True dark chocolate consists of only cocoa liquor, cocoa butter, sugar and vanilla.
Milk Chocolate is the most popular chocolate, and contains milk power or condensed milk. A 10% cocoa concentration is required in the U.S. while Europeans require a 25% minimum of cocoa solids.
