Mexican Drinking Chocolate

Mexican drinking chocolate
4 oz unsweetened chocolate 4 cups milk
2 cups heavy cream ¾ cup sugar
1 ½ teaspoons cinnamon 2 eggs
3 tsp pure vanilla extract

Melt the unsweetened chocolate on stove top in the top portion of a double boiler. Heat the milk and heavy cream on low in a separate heavy sauce pan (until hot but not bubbling).

Once the milk and cream mixture is heated add 3 tbsp of chocolate, mix well. Blend rest of the milk mixture, sugar, and cinnamon.

Beat the eggs and vanilla together in a small bowl. Add a tbsp of the chocolate mixture in with the eggs and mix well.

Stir the egg mixture into the chocolate slowly. Briskly whisk the drinking chocolate in the double boiler for 3 minutes, serve immediately.

Makes 8 large servings and 16 smaller servings
