Dark Chocolate, Raspberry Cake and its Chocolate-Ginger Mousse
For a 7 to 8 ” in diameter cake, or 3 x 3″ individual ones

You need:

For the Chocolate Cake:

* 2 2/3 oz dark chocolate, 64% cocoa contents.
* 1 Tbsp unsweetened cocoa
* 3 large eggs
* 1.5 oz confectioner’s sugar
* 1 tsp cornstarch

For the Chocolate-Ginger Mousse:

* 1 3/4 oz dark chocolate, 64 % cocoa.
* 1/4 cup (minus 2 tsp) milk
* 1/2 gelatin sheet
* 1 tsp finely grated ginger root
* 2 Tbsp confectioner’s sugar
* 1/2 cup (minus 1 Tbsp) cold heavy cream
