Mocha-Coca Cake
Cake:
1 package chocolate fudge cake mix
1 cup water
2/3 cup strong coffee
3 eggs
1 teaspoon coconut extract
Preheat oven to 350 degrees. Prepare two 8-inch cake pans by cutting a piece of waxed paper to fit the bottom.
Mix cake mix with water, coffee and eggs with a mixer until smooth. Divide batter in half and pour into the prepared cake pans. Bake in preheated oven for 35-40 minutes.
Remove from oven and allow to cool about 15 minutes on a cake rack. Remove cakes from pans and allow to cool totally before frosting.
Frosting:
1 can prepared chocolate fudge frosting
1 teaspoon instant coffee dissolved in 1 tablespoon hot water
1/2 teaspoon coconut extract
1/4 to 1/3 cup confectioners' sugar
Mix canned frosting with coffee and coconut extract, stirring until smooth. Add confectioners' sugar and stir until creamy.
Place one layer of cake top side up on serving plate. Top with icing. Add second layer, top side down. Frost sides and top with remaining frosting.
Note: The amount of oil called for on cake mix directions is replaced with coffee in this recipe.
