Last year I worked the Buffet Enhancements trade show booth at the Texas Restaurant Association's
Southwestern Foodservice Expo in Dallas. Our feature was our commercial chocolate fountain and we ran it offering sample chocolate dipped pretzels for the trade show attendees. The neighboring booth was a manufacturer of meat smokers and they were giving samples of their smoked ribs.
I never would have believed it, but one of the guests proceeded to grab a rib from the neighboring vendor and plunge it into the chocolate fountain, coating it with rich Belgian chocolate. That should have tipped me off to a trend.
Chocolate infused BBQ rubs and sauces are just beginning to catch on.
The folks at Diva Chocolates subscribe to the adage that everything is better with chocolate. They feature a line of chocolate dry rubs that are gracing trendy barbecues this summer.
The BBQ Report published a chocolate BBQ sauce that features Hershey Dark chocolate Syrup.
